Gina’s (Now Kathleen’s to me) Skinny Buffalo Chicken Dip
**I’m not usually a big fan of “Light” versions of anything. If I’m going to indulge in the act of gluttony for special occasions (i.e. birthdays,  vacations, any day of the week that ends in Y), I’d much prefer the full fat version of things (save lattes…I’m a “2-pump skinny vanilla latte w/ extra foam”  Starbucks girl).
With that being said, I must acknowlege that this recipe is to die for.

Make it and eat it…all of it…
For the record, Kathleen also made a delicious Spinach Artichoke Dip which I think is from the same website (but not sure)…I’m guessing it’s this one.  We may or may not have also had a homemade pepperoni pizza, brownies AND cookies but hey…it was the Super Bowl and while we don’t care all that much about football - it was a superb excuse to indulge.
(**It should be noted that I haven’t always felt this way.  I spent years (YEARS!!!) counting calories/points/fat grams/carbs/fiber in efforts to shed extra poundage.  I think it works for some people…just not me.  Personally, I find that if I deprive myself of the full fat/sugar versions of anything, I just eat MORE of it in an effort to satiate my cravings/hunger. Go Big or Go Home and Go to the Gym).
